Grilled-Tomato Linguine
Ingredients
Grilled Tomatoes*
1 pound linguine
Salt
2 tablespoons extra-virgin olive oil
1/2 cup finely grated Parmesan, plus more for serving
Directions
1. While preparing grilled tomatoes, cook linguine in a large pot of boiling salted water until al dente, according to package instructions. Drain; return to pot.
2. Add olive oil, 1/2 cup Parmesan, and grilled tomatoes. Divide among bowls, and serve immediately with more grated Parmesan, as desired.

* Grilled Tomatoes
Makes 1 quart; Prep time: 15 minutes; Total time: 40 minutes
Grilling plum tomatoes gives them a smoky flavor—ideal for use in many recipes.
3 pounds plum tomatoes, cored and halved lengthwise
3 tablespoons olive oil
1 tablespoon chopped fresh thyme or 1 teaspoon dried thyme
Salt and pepper
1. Heat grill to high. In a bowl, toss tomatoes with oil and thyme; season generously with salt and pepper.
2. Starting with cut sides down, grill tomatoes until soft and charred, 8 to 12 minutes per side.
3. Return to bowl; cut into rough pieces with kitchen shears.
