Zucchini Bread
Makes 2 loaves Ingredients 3 eggs 2 cups sugar 1 cup oil 1 tsp vanilla extract 2 cups zucchini, shredded 3 tsp cinnamon 1 tsp baking soda 3 cups flour 1 tsp salt 1/4 tsp baking powder 1/2 cup chopped nuts 1/2 cup raisins
Directions In a large mixing bowl, beat eggs until foamy then add in the sugar, vanilla, and oil. Blend in shredded zucchini. In another bowl blend the remaining dry ingredients and then slowly add add to the zucchini mixture; blend until fully mixed. Grease or line 2 loaf pans; divide batter evenly between the two pans. Bake at 325F for 60-70 minutes.
